Thanks for using Affiliates Enterprise plugin for your project.
Please refer to the following link which provides and example implementation of affiliates_referral action hook which is triggered after a referral has been recorded, It includes all the data you are looking for.
Also note that the API is in PHP and even though we have plans to include also a REST API for the plugin, this is something still not implemented.
