Hi Aaron,
That would depend on the plugin you are using for invoices, if it supports custom tags or notes.
Please let me know which one you are using, so that i can have a look too.
Also, you can add a note to an order when editing it, if it fits your configuration. This note is availiable in the orders overview if you mouseover the sixth column.
