Where is the developer documentation for creating a custom reporting class? I have a client who has some pretty complex needs to calculate the percentage of the sale. I’m hoping to create a custom class to calculate the correct percentage. Is there a template I can follow or some information on what interface I should implement?

In general, everything that has to do with the Affiliates plugin, is availiable through the API.
If the report has to do with the totals, then i would suggest the Affiliates Totals class.
If you want to create a different way to calculate earnings for affiliates, then you should have a look at Affiliates WooCommerce Integration and other custom methods created by Karim and Antonio like affiliates-custom-method-minimum-rates, affiliates-custom-method-minimum, Affiliates_Custom_Method_By_Sales, Affiliates_Custom_Method-Products_amount and create you own custom method.
If you are able to, please share some more info on what is the general idea you want to build.
